I’m always on a quest for healthy snacks for my toddler and I found a snack that fits the bill quite nicely. These coconut flax energy snacks aren’t too much different from my homemade granola bar recipe that I here posted a few weeks ago, but they have a few different ingredients, less sugar and added coconut.
What I love most? You don’t have to bake them, so they’re quicker and easier to make! They’re also in a fun, pop-able bite size, so that’s a double plus!
NO COCONUT FLAX ENERGY SNACKS
Makes about one dozen energy snack balls
- 1/3 Cup Organic Honey. I use raw honey
- 1/2 Cup Organic flax seeds
- 1/3 Cup Organic Peanut Butter or Other Nut Butter
- 1 cup Organic quick oats
- Dried Fruits (I used Dried cranberries, Dried Plums, Dried Coconut Shavings) add as much or little as you desire.
Mix them in a large bowl. Mix them well!
Put the mixture in the refrigerator to chill for about a half an hour
Take them out and pat them into balls. If you roll them like a cookie, they will fall apart. You need to pat them carefully into balls, where they will stay in that shape.
They’re easy to pop in your mouth and enjoy while you’re getting the added benefits of coconut, flax seeds and fruits! This is definitely something I feel good about when my toddler is munching away.
